Baking trial for Christmas Eve

I know it’s still one month ahead until Christmas, but in advance  each year I try out  few new cookies beside our traditional Christmas Eve cakes like gerbaud, beigli and walnut linzer.

I know it’s still one month ahead until Christmas, but in advance  each year I try out few new cookies beside our traditional Christmas Eve cakes like gerbaud, beigli and walnut linzer. This year I started with sweet biscuits.

One of my favorite cookie from my childhood was the most commercially available pretzel-shaped linzer pastry coverd with chocolate. Nowadays unfortunately I can not find in stores or what I have tasted was far away the taste what I have remembered… .So I decided to try to prepare this biscuit on my own. By this I can ensure the quality of the ingredients.

The recipe was pretty easy, first I prepared a simple shortbread dough. In order to have a healthier cookie one part of the white flour was replaced by ground almond another part by oatmeal flour ( white flour 40%, oatmeal flour 40 % and ground almond 20% ). I shaped the dough into pretzels, then I put them into the preheated owen and baked them 15 minutes ( 180 degrees Celsius). After I cooled the pretzels I dipped them into melted dark chocolate.

This biscuit has the best texture and taste after few days, we know it by experience JWe like it very much so for sure it will become to be part of our Christmas Eve baking book.
