I am always looking for the chestnut season, when chestnut vendors appear in the downtown of Budapest. Of course if we have enough time we can prepare it at home as well. Around the town Velem (West Hungary, next to the Alps) you can find the best quality chestnut. Local people organize Chestnut-Festival in this town every year. You can have a look into the unique technique how they roast the fresh chestnut and of course you can taste the “result” and other delicious bites. Feel free to ask the locals for special chestnut cake recipes.
There are plenty of different chestnut recipes (e.g.: chestnut cream soup; turkey stuffed with chestnuts; chestnut heart as a cookie, etc.), but my favorite is the simple chestnut puree. I mash the high-quality chestnut, I flavor it with sugar and rum, then I grate it on a kitchen grater. At he end I put whipped cream on top. If I have sour cherry at home, I mix it to the puree or I put it on the top of the whipped cream as decoration. I do not know that person who would not like it!:)
