After a long time last week I cooked this meal again, because my husband, Peter asked me for it (it is his favorite dish). This dish is made of rabbit, which is of excellent quality in Hungary.
It is a little bit difficult to purchase rabbit meat, but it is worth the legwork, because it is unique and very healthy. I am lucky because I have a friend who breeds and prepares rabbits. So when I have the prepared rabbit meat, I went to the market and bought lots of fresh root vegetables (carrot, parsley root and celeriac root). Namely, not only the meat is interesting in this dish but also the special sauce and the side dish as well. In the sauce there is sweet and sour taste together. The sweet is provided by toffee, carrot and parsley while the sour taste is provided by white wine or lemon. The typical side dish is bread ball.
On weekdays this food is rather made of beef but the result is just as delicious.
When I was a young girl, my mother cooked this dish of rabbit at family events and everybody loved it except for me. I felt sorry the little bunny and I couldn’t enjoy it. Now it has changed and I am fond of its all variations.
